Cinnamon Breakfast Biscuits
adapted from Better Homes and Gardens New Cook Book
1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
2 tablespoons sugar
1 tablespoon baking powder
3/4 teaspoon ground cinnamon
1/4 teaspoon salt
6 tablespoons cold butter
2 tablespoons unsweetened applesauce
2/3 cup milk (I used 1%)
1/2 cup raisins or other dried fruit (optional)
For the icing glaze (optional):
1/2 cup sifted powdered sugar
2 to 3 teaspoons orange juice, milk, or water
Preheat the oven to 400 degrees. Combine both flours, sugar, baking powder, cinnamon, and salt. Cut in the butter. Make a well in the center of the dry ingredients. Add the milk, applesauce, and raisins (if using). Stir just until moistened.
Turn the dough out onto a lightly floured surface. Knead the dough until nearly smooth (10-12 strokes). Lightly roll the dough to 1/2 inch thickness. Cut biscuits using a floured biscuit cutter (or rim of a glass).
Place the biscuits 1 inch apart on an ungreased baking sheet. Bake for 10 to 12 minutes, or until golden. Remove biscuits from the baking sheet to cool slightly.
If making a glaze, mix the sifted powdered sugar with the liquid of your choice (juice, milk, or water) and drizzle the glaze over the warm biscuits. YUM! (Makes 12 biscuits)
